Experience an unforgettable evening of story-driven dining, where each course reflects the landscapes, seasons, and producers of Western Canada.
Led by Executive Chef Darryl Huculak of Olive Bistro & Lounge (Jasper) alongside Executive Chef Dean Fast of Rouge (Calgary), this collaborative Chef’s Dining Experience invites guests to explore a thoughtfully curated 5-course menu, with an optional wine pairing.
Centred around locally sourced ingredients—including bison as a featured protein—each dish celebrates the transition between winter and spring through foraged elements and refined technique. Throughout the evening, the chefs will guide guests through each course, offering insight into the inspiration, flavours, and craftsmanship behind every plate.
The experience begins with a cocktail hour (optional add-on) featuring a foraged-inspired welcome cocktail and elevated snacks, setting the tone for the journey ahead.
Rooted in ethical and sustainable practices, this dining experience highlights ingredients sourced from nearby farms, seasonal availability, and a mindful approach to cooking—from root-to-stem and nose-to-tail—every detail is designed with intention.
More than a meal, this is a connection—to the land, to the producers, and to the story behind every bite.
