At its heart, French cooking isn’t about being “fancy”—it’s about respecting the ingredients. Whether you’re using a truffle or a 50-cent onion, the goal is to make that ingredient taste like the best version of itself.
· Course One – Cassoulet – Hearty bean stew with chicken and sausage
Think of Cassoulet as the ultimate French version of baked beans and franks but leveled up. It originated in the south of France as a “peasant dish,” meaning it was created by people who had very little money but plenty of time.
It’s a hearty, slow-cooked casserole designed to fill you up and keep you warm. (GF, DF, NF)

· Course Two – Riz au Lait – Rice pudding with oat milk, cinnamon and vanilla
If Cassoulet is the “cozy sweater” of main courses, Riz au Lait is the “weighted blanket” of desserts. It’s a simple, sweet dish made by simmering rice in oat milk until it transforms into a thick, custard-like treat.
