Yellow split pea soup with maple syrup braised ham hocks “Bertierville Creton“ served with Hoopers baked bread & pickled root vegetables.

2^nd Course

Smoked Pork cheek, apple and maple bangers & maple roasted winter vegetables

Duck confit meat pie “tourtiere” & homemade ketchup

3^rd course

Piglet’s Ham braised to the bone, maple syrup glaze & maple roasted winter vegetables.

Country style soufflé omelet with pork crackles

Roasted duck fat potatoes and herbs
