Description
Celebrated Executive Chef Wolfgang Sterr brings decades of culinary experience to the Culinary Stage for an exceptional plant-based dinner paired with naturally grown wines.
Renowned for his creative vegetarian cuisine and planet-conscious approach to cooking, Wolfgang Sterr presents an intimate four-course experience showcasing the remarkable depth, elegance and satisfaction of food grown from the earth. Each course will be thoughtfully paired with naturally grown wines selected to complement the ingredients and flavours on the plate.
The evening begins with Pemberton Valley butternut squash soup, finished with toasted pumpkin seeds, fragrant sage oil, and smoked salt. A vibrant beetroot carpaccio follows, featuring beets from North Arm Farm with cashew cream, hazelnuts, citrus and fresh herbs.
For the main course, Wolfgang transforms a French classic into a rich forest mushroom bourguignon served with silky parsnip mash, root vegetables and gastrique. The evening concludes with a warm Fraser Valley apple tart accompanied by oat crème, spiced crumble, and apple cider caramel.
More than a dinner, this is an opportunity to watch and learn from a chef who has spent decades refining his craft. From the Culinary Stage, Wolfgang will demonstrate techniques, explain the thinking behind each course, and share some of the kitchen secrets that bring extraordinary flavour and finesse to plant-based cooking.
Created in collaboration with AWARE, Whistler’s local environmental charity, the evening will also support the organization’s work to protect Whistler’s natural environment. Ticket proceeds from this event will go directly into AWARE’s important environmental work, whilst guests enjoy a memorable culinary experience rooted in exceptional ingredients, thoughtful preparation, and a genuine love of good food.
