Founded in 1798 and legally licensed in 1826, Highland Park remains the northernmost single-malt Scotch distillery, famed for its traditional floor-maltings, local heathery peat, and sherry-seasoned oak casks that create its distinctly smoky, complex profile.

We’re thrilled to welcome Adam Ellesmere of Highland Park, who will join Soren to co-host the evening—guiding guests through each pairing, finishing with a spectacular 25-year bioluminescent finale.
