Event Description
Build on your breadmaking foundation with Breadmaking Mastery 2.0, an advanced, hands-on baking workshop in Hamilton focused on enriched and yeasted doughs that require precision, patience, and technique. This small-group class dives deep into three iconic bakery staples—Brioche, Bagels, and English Muffins—each showcasing a different approach to fermentation, hydration, and structure. 🍞
Throughout the four-hour experience, you’ll work through the complete breadmaking process from start to finish, gaining a deeper understanding of how fats, sugars, and fermentation timing influence flavour, crumb, and rise. Learn how to manage high-butter doughs like brioche for a tender, golden result, shape and boil bagels for their signature chewy crust, and griddle English muffins to achieve the perfect balance of softness and texture.
With expert instruction and hands-on practice, you’ll refine key skills such as kneading enriched doughs, controlling proofing, shaping with confidence, and baking for consistent, professional-quality results. Along the way, you’ll explore how to balance sweetness, elasticity, and gluten development—skills that transfer easily to other advanced baking projects.
You’ll leave the workshop with freshly baked breads to take home, detailed recipes, and practical techniques you can confidently recreate in your own kitchen. Cancellation & Rescheduling
• All workshop tickets are final sale
• 48 hours’ notice required via info@chocolatetales.ca for rescheduling
• Eligible changes receive store credit
• Late changes (under 48 hours) incur a $19 fee per ticket
• Weather-related concerns may qualify for full credit or rescheduling

Refund Policy
All ticket sales are final. To reschedule/cancel a booking we require a minimum notice of 48 hours in advance via email to: info@chocolatetales.ca. Once notice is provided tickets are eligible for a full store credit. Store credits can be used to book another class or to purchase chocolate from our online store. If less than 48 hours notice is provided for any reason, Chocolate Tales will deduct $19 off the value of each ticket and provide a store credit accordingly. Force majeure reasons will be assessed.
