POP-UP!!!

Here we go, a long awaited dinner with me, Billy.

I've been so grateful for all the support throughout and after my time on Season 9 of Top Chef Canada. I'm been slowly making my away across the country.

Late Night Snacks with Billy will be a different kind of dinner, it is 7 courses inspired by what chefs like to eat at the end of the night after a long shift in the kitchen. The menu will showcase my Asian heritage and French influences.

(My menu is all gluten free, no alterations to the menu please and thank you)

 

 

LATE NIGHT SNACKS WITH BILLY

 

• togarashi potato rosti, jalapeno sanshozuke sour cream, ikura & chives
• yu choy, miso almond dressing, lacto-fermented radishes, pumpkin seed gremolata
• kombu cured tuna tataki, yuzu kosho vinaigrette, kohlrabi, pomelo & chicharron 
• bison tostada, nori emulsion, mustard seeds & pickled scallions
• sake kasu sablefish, summer zucchini, sesame furikake
• pork tenderloin, apricot hoisin, ginger scallion chimichurri and toasted lentils
• caramelized peaches, soy compressed strawberries, thyme and black pepper crumb, lemon curd
